Irene here, founder of Earth & Mama Co. and today I'm excited to share with you a recipe for a delicious vegan chocolate cake. This recipe is a vegan variation of a chocolate Birthday Cake, and I'm thrilled to put our own spin on it.
Here are the ingredients you'll need:
- 1 cup all purpose flour
- 1 cup oat flour
- 1/2 cup vegan chocolate powder
- 1 pinch of salt
- 1/2 cup agave syrup
- 3 vegan eggs (egg replacer of your choice)
- 1 spoon vanilla extract
- 1/2 cup coconut oil (melted)
- 1/2 cup vegan chocolate chips
- 1/2 cup chopped almonds
- 1 cup soy yogurt
- 1 spoon baking powder
Here are the steps to make it:
- Preheat your oven to 190 degrees Celsius.
- Mix all dry ingredients together in a large bowl.
- Mix all wet ingredients together in a separate bowl.
- Combine the wet and dry ingredients and mix well.
- Fold in the chocolate chips and chopped almonds.
- Pour the batter into a greased cake pan and bake for 45 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool completely before slicing.
When the cake is cold, you can separate it into two layers and fill it with strawberry marmalade. Serve it with vegan yogurt and fresh red berries.
